I stumbled upon this site http://brothersofaesir.eu/dragon/index.php that has a handy method of tracking which characters you have done what dragon / boss with. It currently has most of the dragons / events that http://guildwarstemple.com/dragontimer/events.php?serverKey=119&langKey=en has.
the site is a guild site for Brothers of Aesir (requires login unfortunately) but is simple to register and use. I used a different email address than i use for guildwars and when i filled in my toons names i used nicknames, but it has been very helpful in letting me track what events i want to and with what characters. It even appears to reset automaticly when the server resets daily.
