  Those of you from around the  Houston aera will know what i`m talking about and hope you enjoy this .

 

  Back in the late 70`s  Ninfa opened up several Tex mex dinners and created a Green salsa that she served along with red salsa with chips ,  It became so popular that now today almost every Tex mex dinner in or around Houston serves this salsa .

 However you will rarely see this sauce outside the Houston aera  but it is so good once you try it you`ll be hooked  and will actualy have withdrawls when you don`t have it for a long time it is so good you can drink it right out of the bowl haha .

                             Ninfa’s Green Sauce
Ingredients:
3 medium-sized green tomatoes, coarsely chopped (you can substitute yellow if you can’t find green ones, but never use red) can use redish with yellow green on it ie not fully ripe as hard to find yellow green in some cities  still taste great 
4 medium tomatillos, cleaned and chopped  just peel husk off  rise under warm water to get sticky residue off 
1 to 2 jalapenos, stemmed and coarsely chopped for mild   5 to 6 for medium can get crazy and add 5 jalapeno and 4 serrano  for hot . 
3 small garlic cloves  or  teaspoon and half  to 2 teaspoon of minced garlic
3 medium-sized ripe avocados, peeled, pitted and sliced
4 sprigs cilantro  basicly just grab 3 or 4 handfuls of the leaves strip them off .
1 tsp. of salt
 2  cups of sour cream

Method:
Combine chopped tomatoes, tomatillos, jalapenos coarse chopped seeds and all , and garlic in a saucepan. Bring to a boil (tomatoes provide the liquid), so do not add water , reduce heat and simmer 10 to 15 minutes.
Remove from heat and let cool slightly.
Place tomato mixture with the avocados peeled and pitted , cilantro and salt in food processor or blender and blend until smooth.
Pour into a bowl and stir in sour cream.

Makes 4 to 5 cups  

 

 

                    be sure to keep chilled , can store in fridge  up to 10 days but it rarely last that long  as it`s normaly eaten  too  fast . just stir it as needed . if it looks a bit watery from settling in fridge  its still good but toss after 10 days if you still have some   doubtful tho .
